Why does Ayurveda focus on three things: diet, daily activities and sleep?

It is because you need both physical and spiritual care. By taking care of our fundamentals, it will bring balance (sattva). Many methods are focusing on one aspect of life (eg: lose weight by having a low carb diet) but is that all in your life? Your life consists not only of weight or your superficial looks. To avoid losing the purpose of your life, I recommend to focus on all three things: diet, daily activities and sleep.
